YEAST & FERMENTATION
The original yeast was caught in the wild. There's a lot of yeast out there, floating the air. The very first wines and beers were produced by the wild yeast that happened to come in with the grapes or fall on the tank. Sometimes, that was good. And sometimes.. not.
The inputs to the manufacturing process are the result of decades of selecting exactly the samples they want and carefully cultivating yeasts that give various properties (for bread, for wine, for beer, for nutrition content, etc.) There are hundreds of different strains of yeasts available.
What is Yeast?
Yeast are single celled fungi. They are related to other fungi – edible mushrooms, baker’s yeast, molds for cheeses and molds that produce antibiotics for veterinary use. The yeast we will discuss is used in making beer.
